
recipe:
- 1 egg (for the vegan version mix 1 1/2 tsp. chia seeds + 1 1/2 tbsp hot water)
- 2 drops of liquid stevia (or alternative sweetener)
- 1 cup wholegrain flour
- 1 cup buckwheat flour
- 1 cup (plant) milk
- 1/2 tbsp baking powder
- for vanilla pancakes: 1 tsp vanilla extract
- for cranberry pancakes: 1 1/2 tbsp cranberry powder
- for frying: 2 tbsp vegetable oil
for your vegan version mix the chia seeds with the water and set aside. then blend all the other ingredients and add the (chia) egg. separate the batter into two bowl and add the vanilla extract to the first and the cranberry powder to the second batter. stir until the cranberry batter has a smooth pink colour. fry the pancakes on a little vegetable oil. enjoy!
