let your kids join in making these fabulous ice lollies that are a superb alternative to store bought ones and processed ice cream. they’re so simple to make and oh so coconutty and creamy and bursting with vitamins from bilberry. finnish Mari who shares her plant based food love on Instagram in her beautiful profile @blueberrysmoothies got us ice lolly crazy! try this one and you’ll want to be experimenting with all the berry powder flavours.
- 1 can coconut milk
- 2tbs bilberry powder
- 1 tsp vanilla
- 50ml plant milk
- sweetener of your choice e.g. 2 tbs of coconut sugar (if you want to go completely sugar free these would be lovely without added sweetness)
put all the ingredients in your mixer and blitz until fluffy. freeze in ice lolly moulds for at least 4 hours or until solid. if you want to drizzle these with chocolate you need to be quick as the surface melts quickly. pop them back in the freezer until the chocolate has frozen.
