in finland we love our buns! the traditional ones are not the healtiest ones so our brand ambassador, Very Berry Lottie, has created a healthified version of this finnish treat, made with our bilberry powder, served with afternoon coffee. @lottieslittlekitchen (lottieslittlekitchen.weebly.com)
- 125g curd or soy yogurt
- 25g yeast or 3tsp dry yeast
- 25g margarine
- 3/4 alternative sweetener (like stevia)
- 250ml plant milk
- pinch of salt
- 1tsp cardamom
- 700ml all purpose flour
- for filling: some more margarine, sweetener and 2 tbsp bilberry powder
- optional: 1 egg for coating
melt the margarine and then mix all the the ingredients together. place in bowl, cover and let rise until doubled in size, usually about 1 hour.
when doubled in size, punch down dough. roll out on a floured surface into a rectangle. spread melted margarine all over dough. mix the bilberry powder and some sweetener and sprinkle it over the dough. beginning at the longer side, roll up the dough and pinch edge together to seal. cut into 12 to15 slices. turn them on the side and put them onto a baking tray that’s spread with baking paper. for a nicer surface you can now coat your buns with an egg. bake the buns at 180°C for about 30 minutes until they get a little golden. enjoy!
