we finns have porridge for breakfast almost everyday. elderly people in finland swear that they have lived this long only thanks to their daily dose of porridge. and a very typical way to spice up the daily dose of oats is to add berries in them – or dried berry powders! Lottie from @lottieslittlekitchen made three kinds of porridges and added lingonberry-, bilberry-, and sea buckthorn powders for some extra vitamins.
recipe for basic berry porridge:
- 160 g instant oats
- 600 ml water (you can also use milk if you like!)
- 1/2 tsp salt
- 1 tbsp dried berry powder
place the oats and the milk or water in a large pan over a medium heat and add a tiny pinch of salt. bring to a steady simmer for 5 to 6 minutes, stirring as often as you can to give you a smooth creamy porridge – if you like your porridge runnier, simply add some more water until you’ve got the consistency you like. add the berry powder at the end so you won’t loose any vitamins through the cooking. serve hot, top with dried berries, banana slices and some sweetener if you like and enjoy!
